Dark Chocolate Cake

This simple cake recipe have been in our family for so many years. I lost count how many birthdays we enjoy eating this Dark Chocolate Cake in every party. My Mom use to cover it with a thick fudgy choco frosting.

And this cake is the very first cake that I bake onboard many years ago. I like the simplicity of it’s procedure and I never had a leftover of this cake whenever I baked.

If you’re baking cakes before, don’t be afraid to the thin batter of this cake. Just follow the directions below and you’ll be fine.

Dark Chocolate Cake

Prep. time: 10 minutes

Cooking time: 35-40 minutes

Difficulty: Very Easy

Makes; 24 slices

Good for: 12 crew

You will need;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk (or 1/2 cup evap. milk + 1/2 cup water)

1/2 cup vegetable oil

1 cup boiling water

Direction;

Preheat oven to 180’C. Prepare a 13x9x2 inches baking pan, spray with cooking spray or brush with oil.

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk  and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared pan.

Bake for 35-40 minutes or until toothpick inserted in the center comes out clean.

Let it cool before slicing. You can cover it with plastic and chill for few days or freeze for a month.

Serve on coffee breaks onboard. Enjoy your coffeetime!!! 😉

Since tomorrow is my eldest princess birthday, we decided to give her a small treat out of this very versatile cake recipe. She’s a big fan of cup cakes, so we did make her a lot… =)

Pour the batter in paper cups.  The mixture is good for 24 pcs. cup cakes.  Bake on 180'C for 20 minutes.

After baking, let the cup cakes cool completely. We use boiled icing for frosting. The best part is decorating it with your favorite sprinkle.
